3Beans and the Vanilla and Smoke bar comprised the first pair. The Mast Brothers have a bar made with Stumptown Coffee, which may have made for a natural combination, but the Vanilla and Smoke accentuated subtleties in the beer— since 3Beans is aged on toasted American oak it has vanilla and woody notes in the finish. The Black Truffle bar stands out as particularly hard to pair, as its funky and savory flavor can be overwhelming. Diesel was robust enough for the task, though, its charred malt flavors matching the chocolate, and big piney hops cutting the earthy, funky flavors. The Bengali was paired with Madagascar, a one source bar with raspberry, citrus and orange rind notes, to work with the hoppy citrus of the IPA. The Gose, with its spicy coriander and salty finish, went with the Sea Salt bar for the final pair.
